This dairy-free sourdough apple crumble is the perfect fall treat. Made with a fermented sourdough topping, this dairy free dessert will have you “crumbling” at the knees.

The secret to a good crumble

HOT TIP – use an Apple Peeler and Corer, this will make your life so much easier.

Squeeze the crumble when mixing so you have some nice chunky surprises.

Don’t overcook your crumble or the apples will become mushy. Check when baking or they might turn into applesauce.

When it comes to the baking dish, make sure to use the correct size, you don’t want one too deep or you might be left with a soupy mess. Having a nice helping of crispy crumble with the apple filling is best.

What is the difference between an apple crumble and an apple crisp?

An apple crumble usually includes flour, butter, sugar more like a streusel. Apple crisp can contain oats and nuts. In the case of our Sourdough Apple Crumble we did not use butter but used the sourdough starter and oil instead.

HOW TO MAKE DAIRY-FREE SOURDOUGH APPLE CRUMBLE

INSTRUCTIONS

SOURDOUGH CRUMBLE TOPPING

This is a fermented recipe so you will need to prepare 12-24 hours ahead of time.

  1. In a large mixing bowl add flour, sugars, cinnamon, nutmeg and blend together.
  2. To the same bowl add sourdough starter and walnut oil, mix this with a spoon until incorporated
  3. Add the chocolate chips and continue mixing together with your hands until there are no flaky bits and it forms into a hard dough. Consistency should be like cookie dough.
  4. Adjust the amount of oil or sourdough starter if you feel it’s on the dry side. Do not add water.
  5. Cover with a towel or plastic wrap and let sit at room temperature for 12 hours.
  6. Cover with a lid and let sit for another 12 hours at room temperature. The yeast and bacteria in the starter will populate. The dough will eat the gluten and the sugars.

APPLE FRUIT BASE

  • Pre heat oven to 400F
  • Peel, core and cut apples and place them in a bowl of water to keep from browning. I use an apple
  • Place apples, flour and cinnamon in an 8×8 baking dish and cook for 20 minutes, this will caramelize the fruit.
  • take out of the oven and cover with crumble mixture
  • bake for an additional 20 minutes or until golden brown.
  • enjoy with a nice scoop of any dairy free vanilla ice cream or coconut whipping cream.

Equipment

  • 1 large mixing bowl
  • 1 8×8 baking dish

Ingredients
  

Crumble Topping

  • 2 Cups All-Purpose white or whole wheat flour
  • ¾ Cup Sourdough Starter/Discard
  • 5 tsp White Sugar
  • 5 tsp Brown Sugar not packed
  • ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • ½ cup Chocolate Chips
  • 10 tbsp Walnut Oil or any other nice oil like olive oil

Apple Bottom

  • ¼ cup Brown Sugar
  • ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • 1 tbsp All-Purpose White Flour
  • 4-5 Large Honey Crisp Apples or any sweet apple green if you like tart

Instructions
 

CRUMBLE TOPPING

  • In a large mixing bowl add
    2 Cups All-Purpose white, 5 tsp White Sugar, 5 tsp Brown Sugar, ½ tsp Cinnamon,½ tsp Nutmeg blend together.
    Add the ¾ Cup Sourdough Starter/Discard and 10 tbsp Walnut Oil, mix this together with a fork until just combined and then add the ½ cup Chocolate Chips (OPTIONAL). Switch to your hands and mix and clump together. Squeezing some pieces together will give you some chewy bits mixed with the crunchy pieces when it's all done. YUM!
    The consistency should be of a hard cookie dough.
    If its too dry add more oil OR sourdough starter, DO NOT ADD WATER.
    Cover with a damp cloth and leave at room temp for 12 hours.
    Cover with a lid for an additional 12 hours at room temperature.

Apple Bottom

  • Pre Heat oven to 400℉
    Peel, chop and core 4-5 Large Honey Crisp Apples and place them in a bowl with lemon water until you are ready to transfer.
    Mix together ¼ cup Brown Sugar, ½ tsp Cinnamon, ½ tsp Nutmeg and 1 tbsp All-Purpose White Flour.
    Drain apples and pour sugar mixture over apples and massage in with your hands.
    Place in your 8×8 inch banking dish and bake uncovered for 20 minutes. This will caramelize the apples.
    Take out of the oven and cover with crumble. Place back in the oven and bake for an additional 20 minutes or until apples are soft with a fork and golden on top.
    Cool for 15 minutes and enjoy with dairy-free vanilla ice cream or coconut whipping cream.

If the flour mixture is too dry add more starter or oil. Do not add water.
If you are not making dairy free you can add butter instead of oil.
